The part in bold makes me retract my statements. You are correct that if it was the NY Times twisting their words (as I believe the Times does in most interviews, especially with a conservative), they would not endorse or promote the interview. They would post a clarification of any disputed points.

The Redstate article is much more even handed (as they usually are) and attempts to explain why they would change their attitude. That is not a good enough reason for me.

I would be very careful of what he said versus what it is reported he said. For example, he did not say that the image of St. Michael was a racist symbol. He said he was told that it had been embraced as such by some white supremacists because of how close it looked to George Floyd. He did make it clear he does not like white supremacists and would pay to get them out of his customer base, and as such he decided to not use the bag he had planned on. I have never understood why any business would care what the customers believed in if they had the cash to pay for the product, but he apparently does. I am guessing it is at least partially because he is afraid of being "cancelled" for allowing these people to buy his coffee, That makes me lose some respect for him, but I am not ready to trash his company over it.
