I have bought ammo at Wal-Mart for years and have never been "walked out". Recently too.
As far as "walking out" a gun purchase-I very much doubt that this has much to do with keeping would be shooters from shooting up the store. It's like some electronic purchases, and etc., they are "walking you" to the customer service because they want to be sure you actually pay for the item.
I guess though, if you are being walked totally out of the store this would not apply. But I have worked for Wal-Mart for about 20 years off and on and never seen this nor heard of it happening.
By the way, I received my brand new CHL and did my walk-about in Wal-Mart and bought some ammo the other day!

I purchased .380 and 12 gauge ammo yesterday at a Walmart at Snyder, TX. They never walk me out. I purchase it at the sporting goods counter, bag it and walk around doing the rest of my shopping. My complaint is they don't seem to stock "Hornady" brand.
