At 80 days (03-11-2016) we've finally had a Status Change on the website, which from what I understand means I've been approved, my info is being sent to the card printers, and the card itself should be arriving soon.. let's see how long it takes to get printed, sent and arrive in my mailbox.

You are incorrect, the wording from the DPS website states:
Nothing about business days or office days, just days.The Department will make every effort to issue your license within 60 days of receiving the completed application packet

12-10-2015: Application (online)
12-11-2015: Finger Prints (electronically through MorphoTrust)
12-19-2015: Class
12-22-2015: Submitted CHL-100 (as a PDF file through the website)
12-29-2015: Received Confirmation e-mail
03-11-2016: Status Change (change of address, lost license etc.. options appear)
After being patient for 70 days I figured it was time to give them a call and find out what was going on.
I called promptly at 7:00am in the hopes of not having to wait the exorbitant amount of time I've seen others around here having to endure.
After waiting on hold for 20 minutes I gave my official particulars, I was advised that it would be "about another 7 to 10 days" before my application would be completed, and then I would have to wait for it to be mailed out.
It looks like there might be a chance that I could make it into the 100 day wait club, joy.
