I used to work at a car dealership in College Station as a porter (clean guy who drives the cars around, washes them after service / body work, picks up and drops off customers...)

Anyhow, they flat told us that if anything came up missing out of a car that we had dealt with, that we would be investigated to the highest possible degree. We never had any problems. If a gun had came up missing, the dealership owners would have turned the entire lot upside down, and tossed all of our stuff until they found it. Things getting stolen from cars while they are being serviced is one of those things that people tend to tell all of their friends about, and that is REALLY bad for business, especially when you are the only dealer for 4 GM brands within 100 miles, so they made that really clear from day 1 that things walking off would not be tolerated.

On that note... I would NEVER leave anything even remotely valuable in my car while I am not the only person in control of the keys.
