It causes larger wounds than a handgun, never jams, never runs out of ammunition, is difficult to block effectively and near impossible to grab without getting hurt. Add to that that a knife can do damage in multiple directions where a handgun only hurts in a straight line, and it's not something you want to take on.

Actually, I went through a lot more screening and training for some low-end temp work than I did for the security jobs. One day of watching videos and whatever background check the state did was pretty much the extent of the requirements.

Level I and II are technically required, but they allow so much time that most guard companies manage to forget about them, and I've yet to hear of anyone being terminated for failing to complete them.

At which point you could always try mind games; after all, the antis say we only carry because we're looking for an excuse to shoot people. Maybe he'll believe it too.

Worst case, I wouldn't be too inclined to bet the victim's life on the implied converse; that he won't kill her if you do what he says. Cutting deep enough to kill isn't as easy as the movies make it look, (especially with what some people consider to be a "sharp" knife - try using a steak knife on a hog or deer sometime) so plan to have a brief reaction period if he does try.
