I would've sort of lied and just said I didn't like the feel of the place. Maybe it was the people or IDK.

Or if you'd like to have a teaching opportunity: "I don't feel safe shopping there." And when they ask why you can explain that places that prevent law abiding citizens from defending themselves are targeted by the bad guys." And then let the conversation play on.
Or similarly: "I don't do business where my constitional rights aren't respected." And let that conversation play on.
IMHO, I'd avoid suggesting that you'd be trespassing because of signage as that could mean anything that a small minded person might decide it meant.

I've used that "I don't feel safe shopping there" line, too. I ask if the person has seen some of those same signs in news reports of robberies and other crimes and suggested that they watch the news reports in the future.

No biggie. I would just say 'I am a very strong supporter of our 2nd amendment right, and they are against it' and leave it at that.

Yesterday me and the wife stopped at furrs cafeteria on alta mere, inside the front entrance they have a huge 30.07 sign, told my wife they must not want anybody to miss it, she asked me what? I pointed to the sign, when we went in the young man at the cash register said I can see it, I told him no you can't, by his demeanor I knew he was messing with me and I knew my .45 was covered, the wife looked puzzled and I told her because I said something about the sign and the slight bulge of my t-shirt he figured I was carrying, told her he's messing with me. we got our food, ate and left, no problems.

How about telling the truth? "I prefer to avoid places that favor criminals."
That is almost certain to elicit more questions, so you can expound:
"They post signs out front that accomplish two things:"
"1. The signs ensure that the most law-abiding and thoroughly vetted citizens must disarm before entering. Failing to do so would make them guilty of a crime."
"2. The signs also let criminals, who obey neither signs or laws, know they can bring their gun in and do whatever they want and there won't be a good guy that can stop them."
"Does it sound smart for anyone to go into a place like that?"

So Furrs had a 30.07 (No open carry)
And by your answer he probably new you were carrying concealed.
Now he says if you are concealing a hand gun you must leave (if he knows the law about notification)
Whatcha gonna do when the law comes for you

If it was me, I would say "I do not shop there because they discriminate against me for the sole reason that I do exercise my 2ndA"
