I forgot about UIS... The pork is really good (ribs and pulled), their smoked turkey is my wife's favorite, their smoked catfish is hit/miss. When the fish is good it's REALLY good. Sometimes it's overdone/dry.
I finally broke down and picked up an electric smoker a few weeks ago. Saw one at Lowes I'd had my eye on, and then found it on clearance so I bought 3... Kept my fingers crossed that some buddies would want one...

... This thing looks like a 5 cubic foot dorm fridge... Works very well.
So far the (apple & cherry) smoked Duck was the biggest hit with friends/family. We're working our way through 15 pounds of ribs (St. Louis cut, first time I tried those, good, but I prefer pork loin back ribs still) and Boston Butt...
Maybe I'll give brisket another try.... Last time I smoked a brisket it took 32 hours. Had trouble keeping the temp where I wanted since it was cold out and I was using charcoal. I was so frustrated that it had no chance of tasting good (to me). The smoke ring was so dark and so deep... it was almost as red as Chinese BBQ ribs.
Not planning any restaurant BBQ for a while...

But Up In Smoke is good stuff if you're in Keller.
