I'm set for the next Utah class, but it got me thinking...
Are there any other states that would be good to have?
Unfortunately, the places I go most often for business are Chicago, Las Vegas, LA, and NYC.
Besides Utah, are there other state we should get?

It pretty much depends upon where you plan to travel. There are a couple of oddball states that are not covered by the combination of Texas and Utah license. Someone posted a link to an interactive map that you could use to figure out that kind of thing, but I don't remember it and can't find it.

The Utah license is the most useful one you can get. It will get you into Nevada and Washington State. After that almost any license you get will only get you into that state and won’t really add to your coverage more than one state at a time. Forget a Florida or Pennsylvania license as the Texas plus Utah arrangement make the FL and PA licenses redundant. Vermont and Alaska of course do not require any license at all. Your Texas license already covers you in Louisiana, but you can flat dab forget about Chicago or NYC, even though Texas does recognize licenses from those places.
The states you can get a license for without leaving Texas, and will add to your coverage one state at a time are; Maine, New Hampshire, Connecticut and Massachusetts. Keep in mind two things however; first, New Hampshire will not recognize your Utah license even though Utah is on their approved list because they do not recognize non-resident license for any state, and second, Massachusetts is a total rip off because they charge $100 for a one year non-resident license.
There are two additional states you may be able to get a license in, but they require applying and/or taking training in that state which makes it a pain unless you really will be spending appreciable time there. They are Iowa and Rhode Island. However, if I am not mistaken, Rhode Island is not a “shall issue state and you have to show cause as to why you need the license.
Finally there are some states that allow open carry, although I am not totally sold on the merits of open carry. They are West Virginia, which is supposed to be very liberal in open carry, then Oregon and Nebraska which have limited or patchwork open carry provisions. This usually means that in rural areas you can carry open, but it may not be legal in certain towns or cities.
No matter where you go, always check the laws applicable to CHLs and especially prohibited places for that state as they can sometimes be very, very different than what we have here. States that may, in the future, have CHLs available, and/or recognize a Texas CHL are Wisconsin and Nebraska, but I would not hold my breath waiting on them.
