I've seen many TABC signs that don't follow the red/blue scheme. The thing CHLs really need to look for is not the color, but the "51%". In fact, I don't remember my CHL instructor even mentioning the color of the sign as it relates to 51% places. I agree.
The words sign="red" or sign="blue" are actually printed (in gray...

) on the TABC license certificate. Keith B cited the actual requirements for the Unlicensed Possession sign

and they don't really specify the color scheme. On the 51% sign, the TABC rules seem to say that the "51%" must be in red.

TABC does not care where you get the signs or what they look like, as long as they meet the minimum legal requirements. As posted, the unlicensed sign requirements are pretty minimal. I could be wrong but the only place I know of a requirement for color is the 51 must be in red and a minimum of 5 inches high in the Government Code. I know of some businesses that have a single sign made up that covers all of the TABC required front door signage in one place. It ends up about poster size but includes the unlicensed possession sign, the warning it is a crime to drink here sign, the if you have a complaint sign, and some other stuff. By having one sign made up and taped to a window by the front door, the store is always in compliance and doesn't have to worry about the condition of several smaller signs that could get ripped or knocked down.

It does also have what appears to be an official state emblem (Maybe (TABC) in the opposite corner. IIRC, they could get in big trouble for having a false "official" state emblem.
They're a good Texas-based business. I'll see if my local one has a sign like that.

Even if the sign does not cover the legal requirements that Chili's has to meet, it is still a valid reminder. All the Unlicensed Possession signs are just that, a reminder. If you don't have a license you are not permitted to carry here, there, or anywhere you are not in control of (your car/private prop). Who cares is the sign is not printed right (obviously only Chili's could be punished for this).
If you have a CHL it doesn't matter, you can carry. If you don't have a CHL it doesn't matter, you can't carry anyway.

Enforceable? Huh? It is not a 30.06 sign.
This is the TABC 'Unlicensed Possession' sign that must be put up at non-51% locations. Means nothing to a CHL'er except that we can carry there.
And per the TABC rules, the sign meets their requirements, so it legal to post per the guidelines.

The felony warning sign is irrelevant to concealed handgun licensees, and the 46.02(c) upgrade to felony doesn't seem to a require a sign. The format of the sign would therefore be a matter between TABC and the restaurant.

Yep. And even possibly irrelevant to the 51% sign. The 51% sign only need to be posted in one language, so you may see it in English OR Spanish, but may not see the other language together. The 30.06 is the only sign that is required to be posted together in both languages.
