Your three examples don't coalesce.
1) you see anywhere in Deep Ellum that isn't? you know of many clubs that AREN'T 51%
Most clubs are probably going to fall under the 51% rule. I live in McKinney, and we have a music venue that I believe would be legal to carry. The venue has a restaurant with a bar and they serve food and alcohol in the restaurant, and they have an enclosed "patio style" bar with a stage. The patio area not only has a bar but also has tables and serves food from the restaurant side of the business. The bands play out on the enclosed patio area. The entire operation is under one roof, and the TABC license is for the entire premises. The business is in McKinney, which does not allow 51% bars, and there are no 51% signs posted.
I am assuming that one could go to see a band at this place and legally carry concealed, even if you only visited the "bar area" to see the band, because the entire premises is under 1 TABC license and they derive 51% of more of their sales from non-alcohol items.
If the police (or a TABC official, who like to hang out in that particular location) made contact with you at that premises and discovered that you were carrying with a CHL and you had consumed an alcoholic beverage who knows what would happen, I guess it would depend on the individual officer's discretion.
