You can sweeten it by the cup (our preferred method) or all at once. It is better to sweeten it while hot, so if you are going to refrigerate,sweeten first. As for what to sweeten it with, that's up to you. My family likes honey, stevia (raw and granulated), maple syrup (it's my ex-Yankee wife who really loves this one), and other natural sweeteners.

One of my treasured memories of my youth was stopping at Ward's BBQ in Shepherd.
The BBQ sandwiches were really good. The kitchen was in the back and the sandwiches slid down a stainless steel chute to the front. Sandwiches were made using three slices of white bread, not a bun.
They had an insulated, open top cooler full of iced saltwater that the quart bottles of apple and cherry cider were stored in. The cider tasted great. The fact that it was frigid and had a slight salty taste made it that much better.
The old building survived the freeway construction and is still standing in shambles across from the Shell station north of Shepherd.
I shore miss that.
