Do you use a Salt and pepper rub? Throw some A-1 on there?
I'm cooking indoors today (too cold) using an Cast Iron Skillet

A little salt and pepper rub should be all it needs....If it needs A1, it either wasn't good quality steak or it wasn't cooked right.

Do you have a broiler? If so, you can do a fair imitation of a BBQ grill. I would rather use a grill than a skillet on a steak, and the broiler is the next best thing indoors.

I brave the cold and cook it on the grill
I haven't cooked a steak indoors in forever, maybe tenderize it a bit with a fork, some salt, pepper, a touch of worcestershire sauce and some garlic, or just some garlic butter.

Salt and pepper only, maybe poked with a fork too.
On the gas grill, hot as it will get.
If under 1" thick, I cook 'em frozen so the center will come out right.
Over 1" I cook them thawed
I like 'em charred on the outside, light pink in the center.
I just figured that out a few years ago.
Rarely do I get a restaurant steak any better.

1. Marinate the steak for 4 days in Viva Zesty Italian Dressing.
2. On the 4th day , set out the steak until it reaches room temperature.
3. Get the grill HOT
4. Four minutes on each side and its done.
You will have a steak that is as tender as butter , but no blood , and an excellent flavor.
I have had steaks at many different steak houses , but never one that's as good as the ones I grill at home.
My favorite is Ribeye. The fat marbling melts into the meat while cooking and adds a great flavor.

I marinate my steaks. Wifey likes to get a commercial marinade from the store. I like to be "creative". My marinade is: red wine vinegar, lime juice, sugar, molasses, salt, black pepper, some tabasco sauce, minced onion, a little garlic, and a jigger of scotch. Marinate a minimum of 4 hours. Mmmmmmm.....

It's usually rib eye, or just plain sirloin.
For sides I do sautéed mushrooms, and baked potato. And it's ALWAYS on the grill.

I forgot to mention...I Love STEAK !!
I can eat so much of it that I end up rolling around on the floor in agony.
Also forgot to mention..A loaded baked potato makes the perfect side to the steak.
OK all this talk has me riled up.
I think its time for STEAK !
