Buying meat in bulk

Anyone ever done this?

I'm thinking about trying out http://www.texasgrassfedbeef.com. I'm not so keen on ordering meat over the internet; I like to see what I'm buying. The prices seem reasonable, though not the best I've seen, shipping is cheap ($0.35/lb for a 65lb order to Dallas), but what I really want is quality, lean, nothing-unnatural-about-it meat.

Any other ideas?

My personal opinion is to find a good butcher shop locally, or even grocery store and talk to the head butcher. Many times they will sell a quarter or half side of beef for close to or the same price, and probably get a lot better quality of meat than mail order. Plano has a couple of good ones; Ye Olde Butcher Shop in downtown and Hersch's Meats on Parker just west of 75.

They've convinced me to try it. I mean, the cows and chickens looked so happy in the pictures. :drool:

We drive all the way up to Muenster to buy our meat from Fischers Grocery. They grow their own feed, raise their own animals, and process onsite. I have never had a complaint about anything I bought there.

They make more different kinds of sausage and smoked cheeses than you can imagine. And, besides that, I don't know anywhere else that you can get schnitzel. (Tenderized pork cutlets for those of you not up on your German delicacies!)

And then there is the strudel... :drool2: oh dear, now you got me started...

I buy half a calf every year from a rancher in Bellville. The beef is grain fed with no hormones. I get it cut the way I want as lean as I want, been doing this for the last couple of years.
