Employment History?

If I can't list 5 years employment history what do I do?

List all you have, going back as far as you can
If you you have 2 years and no more, just list it as is.

you may be able to write "no prior work" or "in college" for the prior years as well, if you are just trying to be sure they realize you are not hiding anything

When I originally read your post, I assumed (yes I know...) that you were young, maybe just out of college, etc. and then stating 2 years of work (or none) makes sense
if you are older, it maybe good to post just as you did, "stay at home dad" in work history, just so they know you aren't hiding anything.

I'm older started late in life,been working the last 4 years before that I was a stay at home dad but all my kids are in school now.

I believe they simply want to know where you were and what you were doing. As long as it was legal, I don't believe it will have any significant effect on your application whether you were self employed, unemployed, student, stay at home parent, homemaker, unpaid missionary, or beach bum.
