Not drinking anything but water. I remember something about boating on this lake being a no-no, but Kayaking? Thoughts?

The only real drawback to Belton is the proximity to Austin... and the recent drought years had much of the Lake Travis traffic up here. It's been unusually busy the last 2 summers.
Although it can get really busy when the weather warms up, Belton is a great lake (minus Corps of Engineers carry restrictions) There are pretty views, willing fish and the water is pretty clean. (as most of the deep canyon type reservoirs are) I see a fair amount of kayakers out there all summer. The ski traffic doesn't usually get heavy until after 10am but we are still a month or so away from that as the water is still a little chilly.
There are lots of areas you could escape the big boat traffic in a kayak, from small creek areas to timber filled areas. If you are coming for the fishing, also consider Stillhouse which is on the south side of town. Much bigger average LM Bass sizes.

You can go in on the Leon river at Mother Neff park and go all the way down to Flint Creek Park with no problem. You can go down to Morgans point if you want. South of US36 (by Flint Creek Park and Owl Creek) is where you'd tart running into more boaters. South of Morgans Point is where you will see the most. You need a map. You might go the other way, I've never tried it, the river goes up past Gatesville.

Part of Lake Belton, at least some of the shore, comes under the "Belton Lake Outdoor Recreation Area" (BLORA) and is part of Fort Hood.
