I’ll Cook My Own- Thank You

Twice I’ve tried to eat a hamburger at well known restaurants. First the meat was frozen and raw in the middle. Second the meat was so cold the cheese wouldn’t melt. I’ll just cook it myself.

I grilled a bunch of burgers last night too.... Mmmm.
Teenage boys sure can eat! Fun to watch the food disappear, especially when you cooked twice as much as you thought you needed.

I raised 4 teenage sons (and 6 daughters). Y'all's only ate twice as much as you thought you needed?? Guess they weren't really hungery.

What percentage of meat to fat are you using? How much do your burgers shrink?

I've been thinking about trying to smoke some patties. I have a Pit Boss Pro pellet smoker so it's super easy to get it going... But I don't want to go through all that for just 4 patties.... I was thinking of smoking about 20 of them and then vacuum sealing and freezing... Not sure how they would turn out afterwards...

I grill 12 at a time and freeze them. 85% lean works for me as far as shrinkage and taste.

These were 85-15 Angus Steakburger. Really good

I've smoked a bunch of burgers on my Pit Boss. I find it best to smoke for 2 hours on low, then reverse sear on a flat iron skillet until done. I've not tried smoking then freezing, but Sprouts has their 85/15 on sale for 2.99/lb. Cheap enough to experiment.

I use 93% stuff, pour on "Wooster" sauce. My view is that if it doesn't shrink, not killing the bad germs. I judge when it is medium done by how much it shrinks. Can't beat home cooked burger.
