The term "Illegal knife" was removed from the Texas Penal Code--I believe it was in 2017. So, YES, gravity knives are legal in Texas.
Knives (and swords) with blade length over 5.5 inches are defined as "location-restricted" knives. You must be at least 18 years old to carry one of these, and there are restrictions where these can be carried, as the name implies.
I didn't get my CHL until 2002 and ran into a Dallas Police Sargent a year or two later that was unaware that we could carry at all or that the state was issuing licenses for 6 or so years by that time.

After MPA passed I got into a "discussion" with a LEO while we were both at work, after much back and forth, I ask him if he had a current blue book he said yes with obvious suspicion in his voice, told him go get your blue book! He went to go get it out of his patrol car and I was writing down where he needed to look in his book on a piece of paper, I handed him the paper and told him here look it up!
