Well, here I am at 5:20 in the morning tired as tired can be after going to bed at 1:30 and getting back up at 4:30 to check the fire. This is my first overnight smoke of a brisket. 15 pounder. I've been keeping the temp around 300 / 325 as the thermometer is toward the top of the lid and brisket is sitting lower (in hopes that it stays around the 250 mark). I ran into one issue and that was when I got back up at 4:30. The temp on the grill showed 125 or so. I'd imagine it was like that for less than an hour or so. Am I ok or will I be serving ecoli flavored brisket?
I've realized BBQ is a bit like golf...You love it but hate it, yet continue to do it because it is one of the most enjoyable things to do.

Do you have a meat thermometer? If it's stayed in the smoke, and you keep it over 140 in the center of the meat for the last hour or so, you should be fine.
I cooked one last night as well- -I got up at around 2am, after 6 hrs of cooking it. I wrapped it up in foil, covered it with a towel and let it cook/cool for an hour or so. I put in it in the 'fridge. Its back in the oven for 4 mor hrs at 225, uncovered.
Yours should be OK sitting a bit at lower temp. I'd worry if it sat all night at the low temp, but not for an hour or so.

I always start mine first thing in the morning. You can also cheat by smoking it for 3-4 hours and finishing up in the oven. I have a cheap grill that is hard to control temp on so I sometimes finish up in the oven. I will be starting mine tomorrow in the am.
Well, I had my alarm set to go off at 8 this morning so I could check it again (I'm up normally at this time, but after waking up at 4:30 and not falling back asleep until 6am, I took no chances). My darling wife was up with Baby Emily already and saw me sleeping through my alarm and woke me up. I just asked her to check the temp and she said 215. I replied..."Perfect...good night!"
I got up about 9:30 and it was sitting at 200. My slight adjustment of the chimney / overall air flow helped keep it at a perfect temp for 4+ hours. I am welding it that way now.
Thanks for all the info folks! I unwrapped it from the foil this morning and she looks purdy! I am going to straight smoke until 1pm (mixture of Pecan and Mesquite) and I'll post a 'flavor report'!

Darlene Smith-Hampton, spokesperson for Northwest Memorial, told Channel 9, "At this time, we do not have a diagnosis. No other afflicted persons have been reported, only the people who were attending the same Memorial Day gathering. However, due to the rapid onset and severity of symptoms among a relatively large group of people, we are taking every precaution." Asked to clarify, Ms. Smith-Hampton said, "The patients are in isolation. We have been in contact with the Centers for Disease Control and Prevention in Atlanta."
Bexar County Deputy Sheriff David Robertson was on the scene with the paramedics. He told Channel 9, "After we ascertained the situation at the house on Blanchard View Drive, we had deputies begin canvassing the neighborhood to determine if any other residents had become suddenly ill. So far, it seems isolated to the one house. But we have cordoned off the street, a cul-de-sac, as a precautionary measure until we receive further official instructions." Deputy Robertson could not say whether or not the Department of Homeland Security was involved in the investigation.

It was a good day at my house when I “mastered” the 2-day cook.
Today, I lit the fire after church, put on chicken and brisket. Chicken came off at 6 for dinner; brisket will come off at 10, into the fridge. Then into the oven early afternoon for a 6pm dinner…
I spent all of 30 minutes cooking my speciality....
I chopped up some porkchops, seasoned with garlic, lowres and pepper, and put them in an iron skillet with some olive oil and about 5 cut up jalapeno peppers. The I cooked some rice and mixed it all together while still cooking in the iron skillet with more butter and olive oil and some more pepper.
Then I mixed it all into a large bowl and proceeded to chow down.
5 minutes later I got a call from my mom because she needed me to figure out how to get the error codes for a 98 dodge ram.
While doing this, my dog proceeded to jump onto the table and eat all of my food. At least I got a nibble of it before she did lol...
and when I say jalepeno I mean it murders your mouth its so hot... yet my dog loved it...
