Did brisket today about seven hours on a pit with an offset firebox. The small diameter oak wood was a little too barky. But in the end, it was hard to tell which was better, the brisket or the Shiner Bock. There's a great run of Shiner Bock on the shelves right now. I'll fine tune the BBQ technique later. Cheers.
