Buffalo Steaks Anyone?

Not true hunting. They are raised to be eaten, but they roam on a good chunk of land, and we use all the bits.
1 round from a stock Remington 700 SPS chambered in .223

That was all cooked the following weekend. Had a bit of a gathering.

Haven't had Buffalo since moving from Colorado. If I recall correctly it is actually a very lean-meat.

Indeed it is lean. So lean infact that you have to add fat to make sausage. Makes great ground and amazing steaks, not so good on the brisket or ribs though, not enough fat to smoke properly.
