Loved this thread. I am normally a lurker but this thread was great - 'course it cost me a couple of bucks, hope that Cajun grub is tasty. I live in Plano - am willing to drive - love country meat markets, small Mom and Pops that do it right - please feel free to point out where I can go next. A bit off topic, I'm looking for calf fries - any recommendations?

I don't think there's any really good stuff in any supermarket in east tex. Some buddies make really great sausage. I find really good stuff in little corner marts in LA thouh.

The last time I had those were in a restaurant near Sulphur Oklahoma. The people who took me to dinner thought they were tricking me into eating them. I am sure they are served at some restaurants, but I haven't seen them in Texas. There used to be a place you could buy them frozen, but I can't find the website.

Chappel Hill does give V&V competition, especially since Chappel Hill has a variety of choices. That's the two I buy when I am out of deer sausage. I know we're talking commercial makers, but the best sausage is the stuff I get from Willie Joe Svetlik in High Hill from my deer. 60% veneison/40% pork with supreme seasoning and natually smoked. YUM YUM. He does sell his own brand of sausage as well which I assume is seasoned like the deer sausage. His High Hill Wieners (hot dogs) are worth a try as well. You can buy them at the Fiesta in Richardson located at Coit/Springvalley. Another vote for Holmes Smokehouse. A close second is Tallent's in Riverside right outside of Huntsville.
