I'll second Kirkpatrick Leather, but I like El Paso Saddlery, too. I've tried both.

Found this guy on another forum today. His price list is one of the photos, and I noticed that "Western/Cowboy" was listed. He's had tons of positive comments on the other forum about work he's done for others, and the photos look like quality work.
