I'm curious as to whether there are published stats as to how often CHL holders draw or shoot.
For example, how many draws and shoots occur per "Carry-year", i.e. one CHL holder carrying for one year.

There are none I am aware of. Would be hard to get stats on how many drew their gun as some may go unreported. Shootings would have to be tracked by licensee and all agencies would have to report them into a specific database to pull from. So, bottom line answer is there are none.

There were a number of studies done in the 90s and I think early naughts, including one done by the Clinton administration, all which showed that guns are used defensively somewhere between 750,000 and 2.5 million times a year. In the vast majority of cases, simply brandishing the gun stopped the assault, robbery, etc.
Those studies don't however break down how many of those instances involve chl holders.
