Other. Give me a good 30-30 any day. I'd prefer a late 70's early 80's manufactured Marlin but I'd take something else if needed.

There is nothing native to Texas that an AR15 will not kill, given proper bullet selection. (Nilgai are not native to Texas... but a 77 grain OTM between the eyes would do the trick)
That is good enough for me.

A 1903/A3 works for me as well. The venerable .30-06 has been putting game and men on and in the ground for over a hundred years now, and has lost none of its potency.
Barring that, it'd be a Remington 700 BDL/LH, also in .30-06.
But I don't have to have only one centerfire rifle, so I'll keep the others too.

There's a couple other "non-native" species that can occasionally be found in Texas. White Sands Missile Range just north of El Paso has oryx, and they are being fruitful and multiplying. I would not be surprised if some have found their way south and east. Then there's the elk farms in Big Bend country. Oh, and feral hogs. I don't think I'd want to use a 5.56/.223 as a hog gun...

My Ruger American is in .30-06. That is a potent round to this day. The ammo is in every sporting goods store, gun store, and Wal-Mart in the state (barring the few that don't sell any ammo). The rifle is now in a Boyd's laminate stock and wears a Redfield 3-9 scope. It'll get the job done.

Barrel can easily be switched out so change the chambering to 300AAC BLK, which would be a worthy adversary to hogs and deer, maybe not elk though.

I have shot probably 20-25 hogs with nothing more than Remington green and white box 55grn FMJ. Some were big, like 250+. I have shot some with a .270. Some ran a few yards, most dropped and kicked for a minute... some folded like a cheap lawn chair and never moved. It is all about shot placement, not caliber... unless you are shooting past about 400 yards, then I would want something with more energy at that range than .223.
I know of an Elk farm out near Celina north of Dallas, still not worried. I have a .308, but I rarely use it

As the question is all encompassing, covering all circumstances, I'd have to say the AR is my choice for 2 reasons only. Spare parts/accessories and availability of ammo.
Having to choose only one rifle is a compromise to be sure, but IMO it's a good compromise for that gun.

You should ad a 3rd reason, capacity.
Any choice of one rifle is a compromise of some sorts. The ar10 is less a compromise than most but I have seen numerous hogs, coyotes, racoons, skunks, prairie dogs, dogs, cats, and deer be put down with an ar15. There are many 2 legged varmints that have been put down by one too. Is it the best for every situation, no. Is it the best compromise one can make to cover all scenarios? I don't know but its pretty darn close.
Ps... Fmj's seem to work best for hogs. Need the penetration

If I could only have one there is no doubt it would be the AR platform.

I picked an AK. For a long time my only Centerfire rifle was a MAK-90 in 7.62x39. I got it because my Dad had one like it that used the same ammo & magazines. I don't own an AR yet, but I do have a couple firearms that use the same mags & ammo because that is what my nearest neighbor (who happens to be my uncle) has. He also has a .308 bolt action, so I got a VEPR that shoots the same caliber. My only other Centerfire rifle is chambered in .357 Magnum because I also have a pistol that shoots that.
Are you sending a trend here? Lol

Model 98 Mauser in 7.62 NATO, the most dependable repeating rifle I know of.
