Do i have to report these traffick violations? Can i just tell them but not produce the "certified" documentation?? Any help would be great!!

Traffic tickets don't count for criminal history.
Only Arrests and Convictions count.

If the moving violations rise to the level of Class B misdemeanor or higher, I think they do have to be reported.

No, you don't need to report them unless you were actually arrested. Even then, I'm not sure how much the DPS cares as I had an arrest 6 years prior to my application (due to warrants over unpaid speeding tickets) and didn't report it but still got my CHL. If no arrests, traffic tickets are a Class C misdemeanor and the state is only interested in Class A and B convictions from within the last 5 years.
