Hopefully someone has been in my spot and can answer. So I've got nerve entrapment (Cubical Tunnel) in my RT elbow which now has a limited range of motion. I've already had two surgeries and will have a third later this year but not having high hopes. That being said, I want to retrain my body to use my left hand to shoot like I could before the nerve damage. I have full range of motion on the left and could conceivably relearn to get into proper stance if switching to left/strong side. I still have plenty of strength on the right but once the elbow goes into full extension, I get a major electrical shock that feels like I stuck my finger in a light socket. So sadly I need a backup plan in the event the nerve can't be repaired to at least get rid of the nerve shock. I'll still be able to use my RT arm as the weak side grip but trying to learn to reprogram my grip to be flip flopped is really a heck of a task. Also... Does it help to try to force your non dominant eye to now be dominate or can I make it work staying RT eye dominant? I've been trying to make it work RT handed but I can't get into a proper stance and hold a target. Very frustrating!
Sure most will say practice but besides that... Any other tips? Any specific exercises? I need a Mr. Miyagi to teach me to catch the fly with the chopsticks but do it left handed.

I am cross-eyed ;) dominant myself. Just park your handgun a bit to the side of your dominant eye. That is, move the handgun a bit to your right side. The next trick is to just get comfortable with the difference in hand-eye coordination brought about by using your left hand to work the bang-bang switch and the right eye to aim. Time, practice and patience will work wonders.

I have always been a bit ambidextrous. After carpal tunnel surgery a few years ago, I went port side for a while during the recovery period. I would dry fire every day until I started feeling natural. I didn't worry about eye dominance I continued to aim with my right eye. My dominant hand healed before I had completely trained myself to shoot left handed. I carry my BUG on my left side and still practice some shooting from the non dominant hand . This is something I think I need to work on,

One of my instructors had me shoot lefty for a full morning. (I'm right handed) Oh man that was really uncomfortable at first, but by the end of the morning he had me shooting lefty very well. The same old rule of muscle memory still applies to weak hand shooting and the same old rule of practice, practice, and more practice still applies also.
Just get to the range and start slow. It will feel awkward at first (at least it did for me) but you'll get the hang of it.
