this is the best homemade salsa I have ever had, it is similar to on the border recipe, it is the cilantro that makes it so special. the after taste heat of this recipe leaves a lingering of heat on the palate, you will not be sweating like a PIG. you can make it that way by adding jalapenos, if you want it really hotter leave the seeds and white veins within the jalapenos ... it is up to you... for me I triple the garlic cloves with a garlic press, double or triple the cayenne pepper, and every once in a while add 2 to 3 fresh jalapeno peppers deveined and de seeded.... below receipe make about 1 usa gallon of product and it healthy as heck - ENJOY. if you want to give it a gentle kick add 1/8 cup vinegar apple/seasoned/ or white vinegar..balsamic is a super substitute...

Ingredients for a Great Homemade Salsa
you do not have to use Contadina tomatoes and sauce just my preference - sometimes I substitute fire roasted tomatoes, or chipotle tomatoes.
•2 28oz cans of Contadina Crushed Tomatoes
•1 16oz can of Contadina Tomato Sauce
•4 cloves of garlic, diced
•1 4oz can of Old El Paso green chiles
•1 1/2 tsp of cayenne pepper
•1/3 tsp of cumin
•1/4 tsp of ground rosemary
•1 medium green pepper, diced
•1 medium onion, diced
•1/2 bunch of fresh cilantro leaves, diced
•2 tomatoes, diced
•Any diced jalapeno pepper or specialty hot pepper
**adjust to your flavor requirements**
I also like to take a package of garden green onions and stalks/chives chopped and added for color and taste, different colored peppers is a nice touch as well, green, red, yellow it is all about what you like!
Prepare all salsa ingredients and place in a large bowl and mix well. It's ready to eat! The salsa is delicious immediately, but it's even better after sitting overnight in the fridge. You will have the best results if you use very fresh products. I have had the best results when I use Contadina crushed tomatoes, they have a great texture.
