This guy is good.

In a comment below the movie, the guy says he will make another movie in the future and will explain what he is doing.

wow, no way could I be that fast, but, I like the aspect of the meat hook, may have to invest in that.
Probably save a finger or two.

Wonder how long his knife stays sharp and what it is, looks like a fillet knife.

Very impressive. I am guessing that this guy may have some professional butchering experience. He operates like he could do that in his sleep.

Wow. A couple of comments....

Not only is he good, but he's got a very good knife. It seemed to be pretty much as sharp at the end as it was at the beginning. Secondly, as someone who has studied a little bit of anatomy, that guy knows his way around a deer carcass. He obviously is intimately acquainted with muscle origins and insertions, and their working relationships with one another, and also just how fragile the connective tissue bonds are between layers of muscles if force is applied in the correct plane.

Looking at where he'd have his fingers if he didn't have the meat hook, I think that's a big part of why he's so fast.

Impressive! I worked at a seafood market for a little while, a sharp knife is something you cannot do without. In a related video he is shown skinning a deer in 2 minutes.

Interesting technique on front shoulders and neck, and taking rib skirt and back strap at the same time in one big "flap".
I've not seen it before or done it that way.

It's a Victorinox Forschner 8" boning knife (model 40017). They run about 25 bucks are easy to sharpen, hold an edge well, and are flexible enough to curve between bone and meat easily. I have a similar knife but in a "food service" grade so it has plastic handles instedof wood. Oh, and I am not NEARLY as fast or clean when I butcher a deer.
