It's a Victorinox Forschner 8" boning knife (model 40017). They run about 25 bucks are easy to sharpen, hold an edge well, and are flexible enough to curve between bone and meat easily. I have a similar knife but in a "food service" grade so it has plastic handles instedof wood. Oh, and I am not NEARLY as fast or clean when I butcher a deer.10Shooter wrote:
